No-Bake Date Energy Bites

Ingredients
  • 1 cup cup rolled oats
  • 1 cup pitted dates (soaked in warm water for 10 minutes if they’re dry)
  • 1/2 cup almond or peanut butter (or any nut butter)
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup mini chocolate chips (optional)
  • 1/4 cup shredded coconut (optional)
  • 1/4 cup cup raisins or dried cranberries (optional)
Instructions
  1. Pulse dates in a food processor until smooth.
  2. In a large bowl, combine the date paste, oats, almond butter, honey, and vanilla. Stir in chocolate chips, cranberries, and coconut if using.
  3. Form the mixture into bite-sized balls.
  4. Refrigerate for 30 minutes to firm up.
  5. Keep in an airtight container in the fridge for up to a week.
