organic butternut squash, peeled and cubed

organic chickpeas, drained and rinsed

organic onion, chopped

organic vegetable broth

Fresh parsley for garnish
Instructions

Heat the olive oil in a large pot. Sauté the onion and garlic until soft.

Add the cumin and cinnamon, and cook for 1 minute.

Stir in the butternut squash and chickpeas, followed by the vegetable broth.

Bring to a boil, then lower the heat and simmer for 25 minutes until the squash is tender.
