Organic Butternut Squash and Chickpea Stew

Ingredients
  • 1 qt organic butternut squash, peeled and cubed
  • 4 cup organic chickpeas, drained and rinsed
  • 1 qt organic onion, chopped
  • 2 qt cloves organic garlic, minced
  • 1 tsp organic cumin
  • 1 tsp organic cinnamon
  • 4 cup organic vegetable broth
  • 1 tbsp organic olive oil
  • 1 tbsp Fresh parsley for garnish
Instructions
  1. Heat the olive oil in a large pot. Sauté the onion and garlic until soft.
  2. Add the cumin and cinnamon, and cook for 1 minute.
  3. Stir in the butternut squash and chickpeas, followed by the vegetable broth.
  4. Bring to a boil, then lower the heat and simmer for 25 minutes until the squash is tender.
  5. Garnish with fresh parsley and serve with crusty bread or whole grains.
