Organic Pumpkin and Coconut Curry

Ingredients
  • 1 qt small organic pumpkin, peeled and cubed
  • 1 cup can organic coconut milk
  • 1 qt organic onion, chopped
  • 2 qt cloves organic garlic, minced
  • 1 tbsp organic curry powder
  • 1 tsp organic turmeric
  • 1 tbsp organic coconut oil
  • 2 pinch Salt and pepper, to taste
  • 5 g Fresh cilantro for garnish
Instructions
  1. Heat the coconut oil in a large pot. Sauté the onion and garlic until soft.
  2. Add the curry powder and turmeric, and cook for 1 minute.
  3. Stir in the pumpkin cubes and coconut milk. Bring to a boil, then reduce heat and simmer for 20 minutes until the pumpkin is tender.
  4. Season with salt and pepper, and garnish with fresh cilantro.
  5. Serve with brown rice or quinoa.
