Organic Pumpkin and Coconut Curry

small organic pumpkin, peeled and cubed

can organic coconut milk

organic onion, chopped

cloves organic garlic, minced

organic curry powder

organic turmeric

organic coconut oil

Salt and pepper, to taste

Fresh cilantro for garnish
Instructions

Heat the coconut oil in a large pot. Sauté the onion and garlic until soft.

Add the curry powder and turmeric, and cook for 1 minute.

Stir in the pumpkin cubes and coconut milk. Bring to a boil, then reduce heat and simmer for 20 minutes until the pumpkin is tender.

Season with salt and pepper, and garnish with fresh cilantro.

Serve with brown rice or quinoa.
