Vegan Pancakes

Ingredients
  • 1 cup Ingredients: 1 cup
  • 2 tbsp sugar (optional for sweetness)
  • 1 tbsp baking powder
  • 1/8 tsp salt
  • 1 cup almond milk (or any plant-based milk)
  • 2 tbsp vegetable oil or melted coconut oil
  • 1 tsp vanilla extract (optional)
Instructions
  1. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Add Wet Ingredients: Pour in the almond milk, vegetable oil, and vanilla extract (if using).
  3. Stir until just combined. Be careful not to overmix; a few lumps are okay.
  4. Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat. Lightly grease with a small amount of oil.
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
