Vegan Pancakes

Instructions

Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.

Add Wet Ingredients: Pour in the almond milk, vegetable oil, and vanilla extract (if using).

Stir until just combined. Be careful not to overmix; a few lumps are okay.

Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat. Lightly grease with a small amount of oil.

Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
