This refreshing recipe elevates grilled cabbage with a unique citrus-miso vinaigrette. The cabbage wedges are charred to perfection, providing a smoky flavor that complements the tangy and savory dressing.

Ingredients

  • 1 head green cabbage
  • Vegetable oil for brushing
  • 1 tablespoon white miso paste
  • 2 tablespoons orange juice
  • 1 tablespoon lime juice
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or agave nectar
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon toasted sesame seeds

Preparation

  1. In a small bowl, whisk together the miso paste, orange juice, lime juice, rice vinegar, honey, soy sauce, sesame oil, olive oil, minced garlic, grated ginger, and red pepper flakes until well combined. Set aside.
  2. Preheat the grill to medium-high heat.
  3. Trim the base of the cabbage and cut it in half vertically, keeping the core intact. Cut each half into four equal wedges, ensuring each wedge has part of the core.
  4. Brush each cabbage wedge with vegetable oil.
  5. Place the cabbage wedges on the hot grill and cover. Grill for 6-8 minutes, or until the edges are charred and the cabbage begins to soften. Flip the wedges, cover, and grill for an additional 6-8 minutes on the other side.
  6. Remove the cabbage from the grill when it is slightly wilted but still firm in the center. Adjust the heat or move the wedges to a cooler part of the grill if they start to burn.
  7. Transfer the grilled cabbage wedges to a large plate and drizzle with the citrus-miso vinaigrette. Sprinkle with chopped cilantro and toasted sesame seeds.
