  • Heat the coconut oil in a large pot. Sauté the onion and garlic until soft.
  • Add the curry powder and turmeric, and cook for 1 minute.
  • Stir in the pumpkin cubes and coconut milk. Bring to a boil, then reduce heat and simmer for 20 minutes until the pumpkin is tender.
  • Season with salt and pepper, and garnish with fresh cilantro.
  • Serve with brown rice or quinoa.
